About this New York tour
Chocolate doesn't grow on trees. Sure, the cacao pods do, but the raw cacao beans within them are super bitter – so much so that animals in the forest just spit them out and walk away. No problem, more for us. Because, many, many centuries ago we humans worked out the sequence of fermenting, drying, roasting, grinding, augmenting, and sweetening required to unlock chocolate's devilishly seductive delights.
But even today, in the kitchens and display cases of SoHo and NoLita chocolatiers, the process is still being perfected. Boundaries are being pushed, intriguing accent flavors are being explored, and new forms are being sculpted. As you'll see in delicious detail on this tour.
Chocolate isn't the only sweet spot on this journey. We're celebrating crafted sweetness and inventiveness in all its incarnations. So you'll taste truffles, bon bons, decadent pastries, handmade candies, as well as some interesting cheeses thrown in so no one goes into complete sugar-shock. And, of course, there are those wines we'll sample – a whole other avenue of exploration in these trendy, creatively spelled neighborhoods.
The walking part's not too ambitious. Your guide is amiable and the proprietors are proud to share their wares with those who share their passion.
Your samples are included, of course, but you'll want to make some purchases to bring home. Stuff this good really doesn't grow on trees.
Stop and smell the chocolate
When cacao first came to 16th-century Spain, it was prescribed as a remedy for pain, fevers, and digestion problems. It also beat coffee and tea to the punch as the first caffeine product in Europe. It became the rage in the court of Louis XIV then London, and soon spread across the planet. These days, we're discovering new benefits – turns out that just smelling chocolate stimulates brain-wave activity tied to well-being.
