Trying to make a living in Hobart's early days as a penal colony wasn't easy, so many British settlers turned to whisky to deal with life. Sixteen legal distilleries made the spirit, but countless illegal operationskept things lively and likely a little dangerous. To bring order, the colony's governor, John Franklin, imposed a distilling ban in 1838 that remained in place for 150 years. Once the ban was overturned in the 1990s, Sullivan's Cove got to work, creating the first homegrown whisky in Tasmania in 1994.
