You'll learn all about the history of chocolate making and the rich lineage of the regional cocoa beans used in Graycliff Chocolatier's products. Plus how these beans are roasted, ground into nibs, stone ground into liquid chocolate, and poured into molds to become the delectable candies you can't wait to sink your teeth into.

      Luckily, that wait won't be long. In the classroom , you can sample e chocolate made on the premises. Then apply your newly acquired dipping, glazing, and molding techniques to make your own confections with Graycliff chocolate and a variety of fresh and unexpected ingredients, which can include anything from in-season Bahamian mangoes, limes, sea grapes, and genips to tomato-basil and bacon.

      The culinary delights of Graycliff extend beyond your chocolate tasting. The property's restaurant was the first fine dining establishment in all of the Caribbean to receive a perfect five-star rating. The menu boasts a rich fusion of Bahamian delights and European fare. And the wine cellar, that houses one of the world's largest collections of fine and rare wine, is home to more than 250,000 bottles. So go ahead and chase that Graycliff chocolate with a glass of vino over a gourmet lunch or dinner. It's vacation, so there are no rules!
