Step-by-step, a professional chef will demonstrate the art and passion that go into making these seemingly simple dishes, sharing time-honored techniques in this interactive cooking class. Pizza made its start as peasant food in 18th-century Naples. The working poor needed a cheap and hearty dish they could eat on the go so they baked flatbreads with tomatoes, cheese, and other toppings. Now you can learn how to make the original Italian pizza. It's as easy as stretch, sauce, and bake. But your instructor will give you expert tips on how to make the dough flexible for that perfect stretch and the tomato sauce tasty, yet light. When your pizza comes out of the oven, it's all yours. Buon appetito!
Now it's time to whip up a sweet treat. Italian gelato is made with less butterfat and air than American ice cream. The different mix of ingredients, plus a slower churning process, creates a far more dense and flavorful finished product. In this small group class, you'll learn about the sensitive heating and freezing methods and natural ingredients and colors that make gelato such a favorite in Italy…and around the world.
As you're learning, you'll also be tasting and sampling all the deliciousness. At the end of the class, you'll even be presented with a graduation certificate. When you get back home, you'll be able to impress your family and friends as you work pizza dough like a boss and churn out the most decadent frozen desserts this side of Florence.
Watch out for the pizza polizia
In 2004, Italy passed a law to protect its Neapolitan pizza. Legally, this pizza must be made with a specific wheat flour and yeast, be round with a 14-inch maximum diameter, and baked in a wood-fired oven at more than 905 degrees. Toppings are also governed by this law. Permissible plum tomatoes come from San Marzano and, for the extra margherita variety, only cheese made from water buffalo milk can be used. So, if you can't do the time, don't commit the crime.
