Step inside Il Mercato Centrale. Now breathe deep. The first smell to light up your senses will likely be the aroma of robust Italian coffee. But the java fix can wait. Today, you're a chef-in-training and on the hunt for ingredients that you'll transform into an impressive spread of Italian cuisine. Don't worry, a bona fide chef will be right by your side to help you pick the freshest, most flavorful offerings in this bustling food market.

Bags in hand, you'll make your way to a professional kitchen the very heart of Livorno. It's a lively port town on Italy's Tyrrhenian coast dotted with villas, castles, and churches and crisscrossed with canals and checkerboard promenades. For a city nearly obliterated in World War II, Livorno has made a pretty sexy comeback.

But enough with the history lesson. You're in the here and now to whip up a culinary masterpiece under the expert guidance of a gifted Italian chef. That's everything from appetizer through dessert and you can bet fresh pasta is on the menu. So roll up your sleeves, because you're getting hands on to wash, chop, knead, and turn up the heat in this cooking class.

After all your dishes are prepared, you'll learn how to artfully present them as a feast for the eyes. Of course, this is also a feast for the taste buds. So pull up a chair and sit down to your traditional Italian meal. This handcrafted (by you!) lunch will be served with a glass of local wine, soft drink, or water. Whatever you choose to pair with all the dining deliciousness. Even after the last bite, this experience will live on with your newfound, brag-worthy Italian cooking skills.

      Lip smacking alla Livornese

When you picture Italian food, you probably don't think mouth-on-fire flavor. But Livorno's multiculturalism spiced up its local cuisine. In the 1600s, the city gave an open-arms welcome to Sephardic Jews escaping the horrors of the Spanish Inquisition. Here, the Jewish community thrived and introduced some tastes of Spain, including exotic spices and the tomato, a recent American transplant. We owe them a big grazie for bringing big flavor to Livorno's table.
