      About this Pisa Tour

      The Carrara region has been famous for its white and blue-grey slabs of marble since it was used to build the walls and halls of ancient Rome. Long before Michelangelo was ever given the job of creating what would become the Renaissance masterpiece David, the sculpture's commissioners knew where to get the best marble in Italy.

      But there was a catch: stonecutting was really, really hard. So hard that it could only be pulled off by men strong enough or desperate enough to spend their days in back-breaking labor at high altitudes, fed on a steady diet of foods like Lardo di Colonnata in order to sustain them through their brutal toil.

      By the late 19th century, the unpopular work and secluded location found appeal among men who wanted to be left alone, including the violent revolutionaries expelled from Belgium and Switzerland who founded Italy's first anarchist group in Carrara. This made for an explosive mixture in 1894, when anarchistic fervor in Italy reached a fever pitch as a rash of protests swept the country, causing the prime minister to declare Italy in a state of siege.

      When the demonstrations spread to Carrara, the protests turned violent: shots were fired, resulting in the death of a police officer and a protester, and soon the conflict had erupted into the full-scale rebellion that would later be known as the Lunigiana Revolt. By the time the military managed to chase the would-be revolutionaries into the mountains, the Carrara tax office was in flames, the police stations had been looted for weapons, and the road leading to the city was barricaded... with slabs of Carrara marble, of course. All of which prompted revolutionary leader Galileo Palla to boast that, in Carrara, "even the stones are anarchists."

      The fight for fat

      Aged for six months in the naturally porous caves of Colonnata, Lardo di Colonnata tastes like nothing else and can be made nowhere else. And yet this centuries-old delicacy was almost outlawed by the European Union, skeptical about a food cured in marble basins. That is, until
