Learn the joy of Tuscan cooking in the ancient hill city of Siena, famous for its museums, art, the Palio di Siena horse race and, of course, cuisine.
You've probably had bruschetta before, but never like this. Bread, garlic, olive oil, and fresh toppings to suit your taste come together for an appetizer that will keep you coming back for more. The name "bruschetta" (pronounced bru-sketta with a hard 'k' sound) comes from an old Roman word that means "to roast over coals." As you sink your teeth into the crispy toast that forms the base of your bruschetta, you'll understand the origins of the term.
Bruschetta is not the only venerable Tuscan dish you will learn to create during this class. Pici, a Sienese favorite, is thick-rolled flour pasta. You'll learn the proper technique to roll pici by hand, making fat strips of dough that will be perfect served with spicy tomato sauce or anything else, for that matter. Then take a bite of history as you craft your very own crostini, warm, crispy bread topped with other ingredients like savory cheese and chopped vegetables. Hearken back to medieval times as you eat right off these crusts like an old Italian farmer, using the bread in place of a ceramic dish.

Tuscany's history stretches back thousands of years. The first major civilization in the region was that of the Etruscan people. In fact, the name Tuscany derives from this group. The rich cultural history of Tuscany can be seen clearly in its food, especially pasta. A bas relief found in a cave dating to the 400s B.C. shows tools that were probably used by Etruscans to make pasta much like we enjoy today. Who knew that one of the tastiest Italian dishes was also one of the oldest?
