Around Tequila, an actual town in the state of Jalisco, explore mile upon amazing mile of blue agave fields, unfurling over hilly earth.

      Across this unique landscape, all of the world's tequila is produced. In fact, Tequila conjured a Pueblo Magico ("Magical Town") recognition by the Mexican Secretary of Tourism as well as a UNESCO World Heritage Site designation. As the birthplace of tequila, this locale's "enchanting" properties are drinkable. And though a quite physical and chemical trick, even the process of making its native nip seems mysterious.

      who pass down centuries-old cultivation wisdom through generations, still plant, tend, and harvest the plants mostly by hand, with the same tools from the past. And while similar to mezcal (created from any type of indigenous agave plant), official tequila uses blue agave plants exclusively. It's not just the alcohol talking. Today adds a whole other dimension to, and demands newfound respect for, this national spirit.

      While some methods have been modernized, mucho tequila production remains similar to its homegrown 1500s origin, when Aztecs made a fermented agave potion. Years later, Spanish conquistadors, fresh out of their own brandy, started distilling agave themselves. Then, around 1600, the Marquis of Altamira mass-produced it. Wonder if any of them ever predicted an entire industry that now yields sixty million gallons each year?
