About this Honolulu, Hawaii tour
You will immediately be welcomed into the Germaine ohana (family) by the warm staff at this iconic event. The setting is a secluded, private beach where the pace is much slower than the bustle of Waikiki. When you hear the call of the conch shells, you'll know it is time for the celebration to begin.
Grab a drink and gather around the imu (underground oven) as the Kalua pig is unearthed and brought to the table for carving. When the feast is ready, you will be invited to load up your plate and taste a variety of authentic dishes along with a few dishes that might be more familiar with mainlanders.
The star of any luau is the roasted pig. And the secret to perfectly moist and delicious roasted pork is the way in which it’s cooked. An Imu is basically an underground oven and with all the advances in technology and time saving kitchen gadgets around today it still remains the best method to cook a pig. A hole is dug (usually about 2-4 feet deep) and a mix of hot coals or rocks is piled on top a carefully wrapped pig, along with leaves to retain moisture and the combination of steam and heat allows for a slow cooked masterpiece.
Once you've had your fill of the evening's fare, relax as the sun sets on the beach and the entertainment begins. The wahine (women) will learn to dance the romantic hukilau hula while the kane (men) try their hand (or rather, hips!) at the exotic and pulsating beat of the Tahitian dance. The entertainment continues with dancers from Tahiti, Samoa, New Zealand and Hawaii, and concludes with a white-knuckled performance from the Samoan fire knife dancers.
Out for blood?
The Samoan fire knife dance, or Siva Afi, was developed thousands of years ago as a way for warriors to communicate after dark, and as a way to demonstrate the warrior's battle skill. True warriors would never perform these dances with a dulled or unbladed knife, and would shun medical care for their injuries. Don't worry, our performers aren't out for blood – only a good time!
